No Bake Cookies – The Way Of The Future

The traditional baking of cakes and cookies is a time consuming task. Usually a big dollop of butter was beaten together with sugar until it turned light coloured and creamy, then eggs and flour was added and mixed together. Then it had to be cooked with a great deal of skill so it turned out into something edible.

Baking these high sugar/high calorie goodies (admittedly very rich and yummy) was usually done by women who often stayed at home, did not go out to work and tended to the housework and cooked every single food dish from scratch.

Now-a-days most women do not have time for this type of cooking or baking which is lucky really as there are now healthier more time friendly ways of creating no bake cookies and cakes. By taking ingredients that do not need any cooking – nuts, seeds, coconut, dried fruit and even vegetables we can create an endless array of the most delicious and so healthy no bake cookies and treats.

No bake cookies provide more nutrients

We know now that cooking and processing food items destroys most of the healthy enzymes and nutrients so although the old way of baking cakes and biscuits was very yummy they were actually devoid of any meaningful nutrition. No bake cookies and cakes supply us with quality protein, healthy carbohydrates and fats unlike the cooked or baked cousins full of way too much sugar, fat and white flour.

If you are not used to eating raw foods you may think it a bit strange to be thinking about eating some no bake cookies or cakes but here is an example of a healthy recipe for a simply yummy batch of high energy bars that you will find very difficult to stop at just having one.

Goji Energy Bars

1 cup sunflower seeds, 1 cup pine nuts, ¼ cup buckwheat (soaked for several hours and drained), ½ cup dates (soaked for 30 minutes and drained) or any other sweetener, 1 cup pumpkin seeds, 1 cup almond, water, ½ cup dried goji berries (can use any other dried berry).

Place sunflower seeds, pine nuts, dates, soaked buckwheat, pumpkin seeds, almonds and some goji berries into a food processor and blend for a few seconds. Tip into a bowl and mix the ingredients by hand using a little water to moisten if necessary and adding the left over dried goji berries to add little bursts of color.

Mold the mixture into whatever shape you desire. Use cookie molds, or make balls with your hands or use a fork on a plate to make compact energy bars.

This new breed of time saving creation of no bake cookies and snacks is quietly replacing the old ways of baking as we discover better ways to do things. We are becoming more aware of what we are putting into our bodies and the bodies of our children and the effect is has on our long term health.

But we still need to be able to enjoy treats and snacks and they have to be able to be prepared with a minimum of fuss and effort to fit into our busy and often stressful modern lives. These no bake cookies and snack type recipes are things you can put in a lunch box or grab from the fridge to take to work.
