Ingredients:  1½ cups dates, ½ cup almonds, ¼ cup walnuts, 3 apples, 2 tablespoons raisins, 1/2 tablespoon cinnamon

Method:

Soak 1 cup dates in warm water in a bowl (leave the remaining ½ cup of dates unsoaked) for around 30 minutes to soften, then drain the water off. Put both soaked and unsoaked dates into a food processor or blender and blend for a minute or two until chunky.

Peel and core apples (can leave skin on if preferred) roughly chop then and add to blender with raisins and cinnamon and blend until desired consistency. Leave them chucky or blend them a bit more for a smoother texture.

Take spoonfuls of the mixture and roll into balls of any size small or larger if desired. Roll in desiccated or shaved coconut or cinnamon so the balls are not sticky and are easy to eat. The mixture can also be placed into the bottom of a glass pie dish, placed in the fridge and cut into bars when set. Wrap in cling film for a perfect healthy snack recipe for a between meal snack that won’t have the numbers on the bathroom scale increasing.
