Raw Carob Zucchini Cookies

Ingredients: 1 large zucchini grated,  1 cup dates (soaked for at least 30 minutes then drained), 1½ cups of coconut flour (made by grinding or blending desiccated coconut until it is fine), 1 cup shredded coconut,1/2 cup cacao (cocoa) or carob powder, ¼ cup coconut oil, 2 teaspoons vanilla essence, 1 teaspoon cinnamon (optional), pinch salt

Method: Place drained dates in food processor or blender and blend till smooth, add all other ingredients except the cup of shredded coconut and blend until well combined.

Take spoonfuls of the mixture and shape into small balls or cookie shapes and roll in the spare coconut.  Pop the cookies into the fridge for 1 hour or more, or put them in the freezer for 15 to 30 minutes so they firm up. Serve as they are or with crème fraiche or a dollop of ice-cream for a special touch.
