It is hard to imagine a healthy dessert. We usually think of sugar laden, cream topped decadent creations and we don’t tend to think of them as healthy. But is there such a thing as healthy no bake dessert recipes?

 You will by now be thinking by now that if we cup out the sugar any dessert would seem bland and boring or you may be thinking that the only healthy thing one can eat for dessert is fruit. Fortunately, there is a lot more to healthy desserts than just plain old fruit.

Now, let’s take a closer look at what healthy foods are. It is simple really. Eat more raw foods. It is hard to believe you can actually have the richest, most delicious of desserts without all the junk that most processed desserts come with. It is totally possible to have healthy no bake dessert recipes made with raw and naturally sweetened ingredients like nuts, seeds, coconut dried fruits and wait for it – even vegetables.

You may have heard recently that uncooked foods are the healthiest food to eat. Cooking, heating, processing and refining foods destroy the enzymes and they can no longer do their job which it to digest the food they are a part of.

This makes the body work harder and the raw food experts believe it is because the body has to tap emergency enzyme supplies in the pancreas to digest the cooked food. This makes one feel tired and less energetic after eating whereas if you eat food that is ‘alive’ you feel energized after eating.

Also called living and plant foods some raw foods are usually eaten by most people every day. However many people are only eating small amounts and then there are those who don’t eat any of these at all. We should be trying to eat as many of these healthy raw and ‘alive’ foods such as raw vegetables and fruit along with nuts and seeds.

No bake dessert recipes can have exotic names

An easy way to do this is to make great raw no bake dessert recipes with exciting names like live blueberry pie, lemon torte, peach tart with lemon ginger cream, chocolate brownies, lime cheesecake cups, cashew orange ice cream, chocolate avocado pie and pineapple desert cake topped with whipped cashew cream.

Blueberry Slice

Base: 1 cup raw pecans (or almonds), ½ cup dates soaked for at least 30 minutes and drained. Place in food processor and blend till well combined. Press mixture into a baking dish.

Topping: 2½ cups blueberries (or any other fresh or frozen berries), ½ cup date ( don’t soak), ½ cup plain yogurt, 1 tablespoon psyllium husks (natural thickener) or could use guar gum or ½ cup ground flax or chia seeds to thicken the mix, ½ lemon.

Place all ingredients except ½ cup of the berries to decorate top of slice into food processor and process until well combined. Pour onto base and chill in fridge for 1 hour until set. Cut into slices and serve.
