2 cups cashews,

1 cup walnut pieces,

1 cup dates, 1 cup raisins,

4 tablespoons cocoa or carob powder,

1 cup water,

1 cup ground flax seeds,

chopped nuts.

Soak dates and raisins in same bowl for at least 30 minutes, then drain. The flax seeds can be omitted but you will need to reduce the water to ½ cup.

Method: Place all ingredients in a food processor and blend until well combined. Spread in a cake or baking tin. Sprinkle with chopped nuts and freeze for a few hours. Cut into pieces.

There is really no need to resort to the old ways of making things like fudge using mountains of sugar and butter and turning what could be a nutritious healthy snack into a dietary nightmare. You will be hard pressed to know the difference between the two as far as taste goes but the difference in nutrient values is profound.
