Healthy No Bake Cookies – A New Breed Of Healthiness

We normally think of cookies as something a good cook can whip up using ingredients like butter, sugar and flour – all things that provide little nutritional value and most certainly add to the waistline and contribute to health problems.

But now there is a new breed of cookie – raw no bake cookies

Can you imagine being able to simply throw some ingredients into a blender, shape the mix into any shape like cookies, bars or balls? Put in the fridge (that’s if they are not eaten first) to set and viola – healthy raw no bake cookies or snacks that you can wrap in cling-film and take to work or school to enjoy sometime during the day when energy levels are flagging.

This new breed of no bake cookies are made with ingredients like nuts, seeds, dried fruit of all kinds, coconut and even vegetables. They supply quality protein, healthy carbohydrates and fats unlike their unhealthy store bought cousins full of sugar, unhealthy fats, chemicals and additives.

Cooking destroys important enzymes and nutrients so we end up with food items that contain zero nutrition along nasty things that do not build health and in fact can harm our health. Not really what you want to be putting into your body or your children’s bodies if you value your health so the new breed no bake cookies that are healthy and delicious is a welcome change.

Coconut Orange Chocolate Squares

Ingredients: ½ cups pecans, 1 cup dried figs, zest and juice of one orange, ½ teaspoon cinnamon, pinch salt

Method: Remove zest from the orange with a fine grater and set aside. Squeeze the juice from the orange into a bowl. Remove the stems from the dried figs and soak in the freshly squeezed orange juice for at least an hour.

Place pecans in a food processor or blender and process for a minute or so. Add the orange zest, the soaked drained figs (reserve the juice), cinnamon and salt and process until blended. Press into a small (8 x 8) pan and refrigerate while making the topping.

Topping: ½ cup walnuts, 1 cup dates, ½ cup cocoa or carob powder, left over orange juice from soaking the figs

Method: Soak the dates for at least 30 minutes to soften. Place all the ingredients in the blender and process until coarsely chopped and well combined. Press on top of the prepared crust and chill for several hours to firm up. Cut into squares.How’s that for a yummy sounding no bake cookies?  Imagine taking a piece (or two) to work or school? It probably wouldn’t make morning tea break as you would be licking your lips in anticipation of its deliciousness.
