Healthy Desserts – Do They Really Exist?

We all love desserts – yummy treats like apple pies, cheese cakes, decadent chocolate creations, ice-cream and rice puddings. But the problem with these desserts is that they are not particularly healthy.  They are all made with oodles of sugar, butter and white flour and cooked leaving little in the way of meaningful nutrients intact.

But we can now make ourselves healthy desserts – yes it’s true. Instead of the unhealthy versions we can make the most delicious, good for you healthy desserts without using any sugar, butter or white flour and without having to cook them saving time in the kitchen.

To do this we use raw ingredients that don’t need to be cooked. Things like nuts, seeds, coconut, fresh and dried fruits and even vegetables can be blended and combined together and made in to an amazing array of healthy desserts.

The beauty of them not being cooked is that more ‘living’ enzymes, vitamins and nutrients that are destroyed by heating remain intact and contribute to our health. Also called living and plant foods some raw foods are usually eaten by most people every day. However many people are only eating small amounts and then there are those who don’t eat any of these at all.

We should be trying to eat as many of these healthy raw and ‘alive’ foods such as raw vegetables and fruit along with nuts and seeds. One easy way to achieve this is to make some delish raw and healthy desserts. Here is an example of one that I am sure you will agree sounds extremely mouth-watering.

Berry Maca Pie

Base: 2 cups macadamia nuts, 1 cup almonds, 1 cup dates, soaked at least 30 minutes then drained, 1/2 cup desiccated coconut                               Place nuts and dates in food processor and blend until a sticky crumb like consistency. Sprinkle dried coconut on bottom of 8-inch pie pan with a removable base. Press macadamia nut mixture onto coconut.

Filling: 2 cups cashews, 6 tablespoons coconut oil (gently warmed), ¼ cup lime juice, ½ cup agave nectar or honey, 1 tablespoon vanilla essence, 6 tablespoons water, 2-3 cups mixed berries, such as blueberries or raspberries.                                                                                                                                      Place all ingredients in food processor and blend until smooth and well combined. Pour mixture onto base and freeze 1 to 2 hours, or until firm. Remove from freezer, slice while frozen, and transfer to serving platter. Defrost in fridge 1 hour or on countertop 30 minutes; top with berries; and serve.

Although some of the ingredients in this fabulous healthy dessert recipe can be a little expensive you will find a little of the pie goes a very long way. You will be satisfied with just a tiny portion unlike the unhealthy version which you have to keep eating just to feel like you have had enough. Raw food healthy desserts are very rich so you can feed a lot of people with just one dish.
