We are hearing more and more lately that we need to eat more uncooked foods. Cooking destroys the ‘living’ enzymes and many nutrients in our food so if we can include some non-cooked items in our diet each day we will be healthier for it.

One of the ways we can achieve this is to include a healthy raw snack or two during the day. There are many ingredients that don’t need any cooking and when combined together make a delicious raw snack that you can feel good about putting in your body and the bodies of your children.

When you make a raw snack recipe yourself you can be sure there are no added sugars or fats and they are free from chemical-laden additives that do not do any of us any good. Most snack foods that you buy are full of empty carbohydrates, unhealthy fats and devoid of nutrition and the one thing they do not lack is oodles of calories.

It is surprising to discover that we love snacks of all kinds so much it has been estimated we get around 25 percent of our daily calories from them alone. Potato and tortilla chips, popcorn, candy and soda – all basically nothing but empty carbohydrates of the worst kind.

Ingredients: 3 cups grated shredded carrots, 2 cups pecans, 1 cup dates, ½ cup raisins, 1 orange, 1 teaspoon cinnamon, 1 teaspoon nutmeg, ½ teaspoon salt, ½ cup shredded coconut

Method: Soak dates in some warm water for at least 30 minutes to soften then drain. Chop orange roughly and place all ingredients in a food processor or blender. Blend till combined together. Can be left rough or blended till the mixture is smoother. Take small handfuls of the mixture and shape into individual bars or press the whole mixture into a large baking tin to be cut when ready to serve

Topping: 1½ cups cashews, ½ cup water, 2 tablespoon honey or other sweetener, 3 tablespoons coconut oil, 1 tablespoon vanilla, ½ teaspoon salt

Blend these ingredients together in a food processor until smooth. Place in fridge to achieve a thicker consistency and spread on top of the bars when ready to serve.
